Recipe Corner: "Apple Cinnamon Crumb Cake"

  1. It is our first autumn here in New York's Hudson Valley and what a gorgeous one it is! This crumb cake made with fall's bounty of NY apples is my newest creation and has The Southern Fried Husband's official seal of approval.

  3. "Apple Cinnamon Crumb Cake"

  4. cake:
  5. 3/4 cup all-purpose flour
  6. 1/4 cup granulated sugar
  7. 1 teaspoon baking powder
  8. 3/4 teaspoon ground cinnamon
  9. 1/2 teaspoon baking soda
  10. 1/8 teaspoon salt
  11. 1/4 cup milk
  12. 1/2 teaspoon pure vanilla extract
  13. 1/4 cup oil
  14. 1 large egg
  15. 2 medium apples, washed, peeled, cored grated
  16. 1/2 teaspoon cinnamon

  17.  crumb topping:
  18. 1/3 cup packed light brown sugar
  19. 1 teaspoon ground cinnamon
  20. 1/4 teaspoon salt
  21. 1 1/4 cups all-purpose flour
  22. 1 stick unsalted butter, melted 
Optional-
 Drizzle Icing:
1 cup powdered sugar
2 teaspoons milk
                                           
Preheat oven to 375 degrees. Spray an 8" round springform pan with cooking spray and dusting of flour. Grate apples into small bowl and sprinkle cinnamon over apples. Set aside. Prepare crumb topping in medium bowl by whisking together sugar, cinnamon, salt and flour. Add melted butter and fluff with fork until mixtures creates crumbs. Set aside. In a medium mixing bowl, whisk together flour, sugar, baking powder, cinnamon, baking soda and salt. Set aside. In separate mixing bowl, whisk together milk, vanilla, oil and egg. Add dry ingredients to milk mixture and stir mix slightly. Pour the cake batter into pan. Place grated apple mixture over the batter. Sprinkle crumb topping over the apples. Bake 30-35 minutes or until the topping is golden brown. Let cool completely in the pan. If desired, prepare drizzle icing by stirring  powdered sugar and milk together in small bowl and drizzle over cake. Transfer cake onto a serving plate or stand. Slice and enjoy!

Review: Glen Campbell's "I'll Be Me" movie documentary and soundtrack giveaway

I was incredibly honored to be given the opportunity to watch Glen Campbell's "I'll Be Me" movie documentary before it opens in movie theaters. I have been a fan of his since I was a young child as were the family members in my household growing up.  I have a list of my all-time favorite songs and at the top of that list is Glen's beloved hit "Galveston". One of the greatest concerts I have ever attended was when my husband, who was then my boyfriend, took me to see Andy Williams and Glen Campbell in concert together at Andy's Moon River Theatre in Branson, MO.



In 2011, when Glen Campbell was diagnosed with Alzheimer’s disease, he would joined forces with his family to fight the biggest battle of his life. Glen and his wife, Kim, made history by going public with the diagnosis – the first time a major American celebrity would share this experience with the world. The Campbell family then embarked on what they thought was going to be a short “Goodbye Tour,” but the three-week engagement turned into an emotional and triumphant 151-show national tour.  

I lost a great-uncle to Alzheimer's Disease and the disease is near and dear to my heart. I remember my sadness when I first heard a news report about Glen's diagnosis. If you have had or currently have a family member or loved one suffering from this disease, the news of someone else's diagnosis seems to strike a raw chord inside of you. It's important to embrace the "hope" side of the disease, which is exactly what Glen and his family are doing. 

This movie documentary is an epic human drama about the undying bond between Glen and Kim, and their unwavering caring for each other, chronicles a story of love, resilience and the power of song. It tells the true tale of how America’s greatest country star would not give up his music or his family, against all odds.

The film features a star-packed lineup of those who know and love Glen, including Bruce Springsteen, Bill Clinton, The Edge, Paul McCartney, Jay Leno, Vince Gill, Jimmy Webb, Blake Shelton, Sheryl Crow, Keith Urban, Brad Paisley and Steve Martin. I love the rare vintage footage shared as well as extraordinary new performances of Glen’s most beloved hits. With joy and a tireless sense of humor, Glen and his family live each moment in the present while preparing for the future, all while playing their music to sold out venues on a star spangled voyage spanning the country from Carnegie Hall to the Hollywood Bowl.

Disney's "Frozen:The Songs" Music Review and Giveaway

I have grown up with Disney movies and music. I was so excited when Walt Disney Music gave me the opportunity to review their new CD "Frozen: The Songs" from the hit movie. This CD was just released on September 30.


The CD includes the 2014 Academy Award winner for Best Original Song, "Let It Go", which I found inspiring as a grown up. The fun songs so perfectly match the wonder-filled movie.  I experienced such heartwarming emotions throughout the sweet song, "Do You Want to Build a Snowman?"


The CD includes this fun "Frozen" foldout poster.
