Komen for the Cure: There are approximately 2.5 million breast cancer survivors alive today in the United States and the number of deaths due to breast cancer seems to be declining. A combination of early detection and more effective treatments is thought to be responsible for the declining death rates.

Today's breast cancer fact, courtesy Susan G. Komen for the Cure: Similar to women, men with an inherited mutation in the BRCA2 gene have an increased risk of breast cancer. Men who carry a BRCA2 mutation have about a seven percent chance of developing breast cancer by age 70. BRCA2 carriers are also at an increased risk for other types of cancer, such as prostate cancer. Men can inherit a BRCA2 from either parent. A man who is a BRCA2 carrier can pass the mutation on to both his male and female children.

From the 1940s until the 1980s, the rate of new cases of breast cancer in the United States increased by a little over one percent a year. In the 1980s, incidence rose dramatically (likely due to increased mammography screening), then leveled off during the 1990s. The incidence of breast cancer declined in the early 2000s. Since 2003, the incidence of breast cancer has remained stable.

Komen for the Cure: Breast and ovarian cancer are somewhat more common among women of Ashkenazi Jewish descent (ancestors who came from Central or Eastern Europe). This is likely due to the high prevalence of mutations in the Breast Cancer 1 and Breast Cancer 2 (BRCA1 and BRCA2, respectively) genes in these women. While BRCA1 and BRCA2 mutations are rare in the general population, between eight and 10 percent of Ashkenazi Jewish women carry one of these mutations.

In 2007, survival rates for men are about the same as for women with the same stage of cancer at the time of diagnosis. However, men are usually diagnosed at a later stage because they are less likely to report symptoms.

The decline appears to be related to the drop in use of postmenopausal hormones that occurred after the Women's Health Initiative study showed their use increased risk of breast cancer and heart disease. Since 2003, the incidence of breast cancer has remained stable.

A Review and a Recipe: Tropical Traditions Gold Label Virgin Coconut Oil and "Angela's Coconut Supreme Cake"

Recently, the Tropical Traditions food company sent me a sample of their Gold Label Virgin Coconut Oil to try out in my kitchen.

 

This coconut oil is USDA certified organic, has no hydrogenation or trans fats and has a long shelf life. It now has a place of honor in my kitchen cupboard. I used the coconut oil to create this coconut cake. I have been baking all kinds of coconut cakes for years and when I tasted this cake, I loved both the burst of coconut flavor and the moist texture of the cake.  

 

 

"Angela's Coconut Supreme Cake"

 

2 1/4 cups all-purpose flour

2 teaspoons baking powder

1 1/2 cups sugar

1 stick butter, softened

1 tablespoon Tropical Traditions Gold Label Virgin Coconut Oil

4 large egg whites

 

Preheat oven to 350 degrees. Spray two 8-inch round cake pans with cooking spray. In mixing bowl, add flour and baking powder; set aside. In separate mixing bowl, beat softened butter with mixer until light and creamy. Gradually add the 1 1/2 cups sugar, a small amount at a time, scraping the sides of the bowl before each addition. Beat for about 1 minute after each addition. Add coconut extract to mixture. Add eggs, one at a time, beating well after each addition, scraping sides of the bowl frequently. Slowly add about one-third of the flour mixture to the creamed mixture. Beat on low speed until blended. Scrape the bowl and repeat with another one-third of the dry mixture. Scrape the bowl and repeat with remaining flour mixture. Spoon batter into baking pans, spreading evenly. Bake for 30-35 minutes, or until toothpick in center of cake comes out clean. Remove from oven. As cake cools, prepare frosting.

My frosting for this cake has my version of half and half: half a stick of butter and half cup of shortening.

 

"Angela's Coconut Supreme Frosting"

1/2 cup butter

 

1/2 cup shortening

4 cups powdered sugar

1 teaspoon Tropical Traditions Gold Label Virgin Coconut Oil

 

¼ cup shredded coconut

In mixing bowl, add first four ingredients. Beat with mixer 1 minute. Add coconut to mixture. Beat with mixer 5 minutes. Frost cooled cake. Use reserved ½ cup of coconut to coat top and sides of frosted cake. Enjoy!

A Review and a Recipe: Sidral Mundet apple soda and "Angela's Apple Cinnamon Delight Bundt Cake"

Sidral Mundet is one of the best-known brands in Mexico and is now sold in stores across America. Their line of apple soda made with real apples and no artificial flavors has been around since 1902. Recently they sent me two of their sodas to review, including their new Green Apple soda.

I loved the taste when I used it in baking my apple bundt cake and making the glaze. This recipe can be easily adapted by substituting regular apple juice for the Sidral Mundet apple flavored soda. This cake can be enjoyed with or without the glaze for diabetic or health-conscious family and friends.

“Angela’s Apple Cinnamon Delight Bundt Cake”

1 1/2 cups Splenda brown sugar

3 large eggs

1 stick unsalted butter, softened

1/4 cup Sidral Mundet Green Apple flavored soft drink

2 ½ cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1 tablespoon cinnamon

5 medium apples, peeled and chopped (I use Granny Smith)

Preheat oven to 350 degrees. Spray bundt pan with cooking spray. In large bowl, combine brown sugar, eggs, butter and apple juice. Mix until smooth. Add dry ingredients and mix until combined. Fold in apples to mixture. Pour batter into pan. Bake for 50-60 minutes, until toothpick inserted in cake comes out clean. Cool in pan at least 15 minutes. Invert cake from pan onto rack to cool completely .

“Angela’s Grand Apple Glaze”

1 cup confectioner's sugar

2 tablespoons Sidral Mundet apple-flavored soft drink

Combine both ingredients in mixing bowl. Stir until smooth. Adjust consistency, if needed, by adding an additional 1/2-1 tablespoon of apple juice. Drizzle glaze over cooled cake and let set before serving. Enjoy!

October is here and it brings one of my favorite times of year, my mother's birthday month and a month full of all kinds of fun fall and Halloween activities. This year, it brings my first autumn as a bride and my 2nd blogiversary celebration. It is also "Breast Cancer Awareness Month". Each day this month, I decided I will share a picture of one of the many pink items in my life that I love and along with the picture, I will be sharing a breast cancer fact or prevention tip courtesy of Susan G. Komen for the Cure . Several of the items I will be sharing are made by companies that give to the cause through the purchase of that very item.

Today's pink item has quickly become one of my favorite things. I fell in love with this item when I saw it on the store rack at the shopping mall and when I read the tag about the company's commitment to the fight against breast cancer, I just had to get it. This is the Columbia Sportswear Company pink ribbon full zip fleece, priced at $34.99. Besides producing this beautiful piece of  breast cancer awareness wear, the company supports the National Breast Cancer Foundation by providing funding for prevention programs.
