- It is our first autumn here in New York's Hudson Valley and what a gorgeous one it is! This crumb cake made with fall's bounty of NY apples is my newest creation and has The Southern Fried Husband's official seal of approval.
- "Apple Cinnamon Crumb Cake"

- 3/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup milk
- 1/2 teaspoon pure vanilla extract
- 1/4 cup oil
- 1 large egg
- 2 medium apples, washed, peeled, cored grated
- 1/2 teaspoon cinnamon
- 1/3 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/4 cups all-purpose flour
- 1 stick unsalted butter, melted

Drizzle Icing:
1 cup powdered sugar
2 teaspoons milk
Preheat oven to 375 degrees. Spray an 8" round springform pan with cooking spray and dusting of flour. Grate apples into small bowl and sprinkle cinnamon over apples. Set aside. Prepare crumb topping in medium bowl by whisking together sugar, cinnamon, salt and flour. Add melted butter and fluff with fork until mixtures creates crumbs. Set aside. In a medium mixing bowl, whisk together flour, sugar, baking powder, cinnamon, baking soda and salt. Set aside. In separate mixing bowl, whisk together milk, vanilla, oil and egg. Add dry ingredients to milk mixture and stir mix slightly. Pour the cake batter into pan. Place grated apple mixture over the batter. Sprinkle crumb topping over the apples. Bake 30-35 minutes or until the topping is golden brown. Let cool completely in the pan. If desired, prepare drizzle icing by stirring powdered sugar and milk together in small bowl and drizzle over cake. Transfer cake onto a serving plate or stand. Slice and enjoy!
